
I have been wanting to try to make these soy sauce eggs forever. Thanks to the lockdown (no thanks?) I finally have all the time to do cooking experiments in my kitchen. I do not know why I waited so long to make soy sauce eggs! And these are the easiest things in the world to make!

Soy sauce eggs can be typically found in Chinese and Japanese cuisines. The eggs are boiled, peeled, and then cooked in a mixture of soy sauce, vinegar, sugar, water, and other optional spices.


I made these eggs twice using two different recipes but Momofuku’s Soy Sauce Eggs on Food52’s website was the winner in my book. (The other recipe called for ginger which I did not like at all. And I love everything ginger! However, the ginger empowered the marinade.)


And you know what is also great about this recipe ? I bet you already have everything in your pantry! If you love Asian food and you like eggs, give these soy sauce eggs a try. The eggs are great for snacking on their own. (My friend calls boiled eggs “nature’s protein bar”! LOL!) And what I also really loved about this entire dish aside from being rewarded with umami flavored eggs to the max — the marinade itself was soooo good as a sauce for rice or noodles! These entire dish was so addicting! I could not stop eating the eggs and rice with marinade for 3 days! Here was how I made soy sauce eggs:
Ingredients
- 6 peeled large hard, medium or soft-boiled eggs (boiled according to your taste)
- 6 tablespoons warm water
- 1 tablespoon sugar
- 2 tablespoons sherry vinegar
- 3/4 cup low-sodium soy sauce
- 1/2 tsp red pepper flakes
Instructions
- In a bowl that can hold 6 eggs, combine warm water, sugar, sherry vinegar, soy sauce and red pepper flakes until mixed and the sugar is dissolved.
- Add peeled boiled eggs in the marinating sauce. Make sure that the eggs are completely submerged. Marinade for at least 2 hours to overnight.
- Take eggs out of the marinade.
- Serve with rice or noodles.
- Use marinade to flavor rice or noodles.
MY NOTES
- I used my DASH egg cooker to boil eggs as seen on my Tamago Egg Sando post. However, according to Food Network, this is how you should cook perfect boiled eggs.
- The longer you marinade the eggs, the stronger the flavor is going to be. I prefer eggs that were marinated overnight than ones that I marinated for just 4 hours. The overnight marinade also tasted more rich and was thicker.
- The eggs with rice in my photos were marinated overnight. The whites have turned very dark.
- The eggs with noodles in my photos were marinated for 4 hours. The whites only turned into a beige color than dark brown.
- I used a mason jar to marinade and store the eggs in for a couple of days.
- Next time I will try to add Chinese Five Spice Powder as I have seen in other recipes.

This sounds really interesting! I workout a lot and often eat boiled eggs as another source of protein. Iβm gonna give this a try!

I printed yours out. Itβs on my fridge now. I see that other recipe adds star anise. Not sure Iβd like that. Kind of a strong spice to go with a delicate flavor like eggs. But Iβm definitely giving your recipe a try!

Enjoy! It is pretty much Momofuku’s recipe except I added dried chili flakes on mine. The chili added another layer of flavor.

Wow they look incredible and your pictures are stunning! I’m not the biggest fan of boiled eggs (apart from having them in sandwiches) but the sauce is amazing! So true, having the sauce with rice and noodles is wonderful. Thanks for sharing this awesome recipe π

Thank you. I love taking pictures of food as much as cooking. Now that I am home during the day, I can take pictures when the light is still good unlike when I was going into my office full time. It was already dark by the time I get home and there was no way to take good photos anymore. I love boiled eggs too much that I have to restrain myself from eating several a day! Ha! Ha! It’s so awesome that photography is one of the activities that can be enjoyed at home. Very true, lighting makes a difference. We’re cherishing these moments at home before everything reopens and begins transitioning back to the way they were! Haha it’s a good thing that boiled eggs are healthy! I am trying to enjoy these moments at home for as long as I can. When things change, I know that I will look back to these days and wish that I can stay home again to do as I please (well, while working from home!). π
